Known for its continuous innovations and the knack for serving international comfort food using the highest quality seasonal ingredients, the Potato Head Pacific Place is excited to introduce a pioneering Farm-to-Table menu created by Executive Chef, Noguchi Haruhisa. The Farm-to-Table movement is deeply concerned with the sustainable use of locally-sourced ingredients in dishes made from scratch. Known for its use of local ingredients, Noguchi has created a brand new menu for Potato Head, launched at the start of February. The finest local produce with provenance has been sourced, organic where possible, by buying direct from local farms and markets. Key ingredients like tomatoes, goat’s cheese, fish, cocoa and even Wagyu beef are supplied by local farmers and suppliers such as Highland Farm in Cianjur and Heritage Farm in Banten. Inspired by the produce available, Chef Noguchi has not only used these ingredients where possible, but also created recipes specifically to showcase them.
